The UPI ID on file on payout day is the one that is paid.

Changing your UPI ID needs no email. Do it on the Payouts page of the portal, and the next payout goes to the new one.

Who reads what

Two addresses. Anything about your personal data goes to the second, so it reaches the person responsible for it.
